Our dispensa is more than just a pantry full of products; it's a repository of stories, people, places, values, traditions, and ideas. 

Some of the items in the pantry are personal favorites of the team, while others were brought to the studio by collaborators, friends, guests, or even producers themselves. 

Our selection process goes beyond taste and quality, seeking out companies that resonate with our philosophy and values. We prioritize products crafted with environmentally and socially conscious methods, ensuring respect for both the environment and the people involved.

Guests in the studio can then try our selection, listen to the stories, and learn about the producers. 

Through our dispensa, we aim to share with the entire community the opportunity to discover these stories. 

 
 

Podere Tiberi

Extra virgin olive oil is a non-negotiable staple in our dispensa and it was the first product we started scouting for.

At just 29 years old, Maria Clara is an olive oil sommelier and the owner of Podere Tiberi.  Her passion for olive cultivation pushed her to transform what was initially a simple family tradition into a product of excellence, treating with dedication every step from field to bottle.

 
 

Each bottle represents not only the unique terroir of Tuscia but also the dedication of a young businesswoman.

We are proud to support Maria Clara and have her fantastic olive oil in our pantry.

 

The cultivation counts around 1500 olive trees, primarily of the Caninese variety (85%), together with the Maurino, Leccino, and Frantoio (15%) ones. Maria Clara has meticulously balanced the rejuvenation of abandoned trees with the planting of new saplings.

Podere Tiberi's olive oil stands out for its rich flavor and aroma, which makes it a great addition to savory and sweet dishes. To taste it, we suggest serving it with some good bread and flaky salt! Delightful.
