Roasting Colombian coffee & amasijos

Gathering people around the table, sharing and exchanging.

At Fusillo the coffee exploration journey never ends. We are constantly sourcing, reading and researching about this fascinating world of specialty coffee.

 
 
 
 
 

Meeting new people and brands in the coffee industry awakens our curiosity and appetite for learning more and more. Recently we started roasting at the lab with the IKAWA home roaster, designed to roast small batches (100g) for amateurs and coffee lovers. As we wanted to share this amazing experience with our community we invited some friends and collaborators to join us for a coffee ceremony.

 
 
 
 
 
 
 
 
 
 
 
 

That is why we contacted our Colombian friend Sofia from @unblendedcoffee and managed to get some green beans to make a special roasting for the event. In order to highlight the flavor and aroma of the coffee, we designed a Colombian breakfast menu to pair three different coffees. We worked hand in hand with @hitoestudio to create a meaningful and authentic food experience.

 
 
 
 
 
 
 

Needless to say, we included some Italian ingredients in our recipes: different varieties of tomatoes, ricotta salata and parmigiano reggiano. For the menu, we went from light to strong in terms of coffee and food. Starting with a washed castillo paired with a soft and airy cassava cheese bread called pan de yuca. Then we continued with a yellow honey castillo accompanied by two arepas: one savory arepa with tomato sauce (hoago), avocado and a slow cooked egg, plus a sweet arepa filled with a mix of cheeses.

 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 

Lastly we served an exotic coconut chocolate mousse with passion fruit, corn crumble and salt flakes. This one we paired with a natural castillo, which was our definitely favorite. We also gifted those who attended a geisha washed Colombian coffee in a custom jar that we designed.

 
 
 
 
 

We are just starting to explore this complex but beautiful and endless journey. We are looking forward to refining the roasting process and thoughtfully sourcing green coffee beans from authentic farmers.
